Peels and stalks that go a long way

Christmas leaves the kitchen full of life… and of leftovers that almost never make it into the story. Orange peels that perfume the air but never reach the plate, cabbage stalks that end up forgotten, half-used apples that oxidise in a corner. It seems inevitable, but it isn’t — and the truth is that much of winter’s flavour lives precisely in these parts that so many of us ignore.

Using peels and stalks isn’t just a good practice, it’s also a way to stretch your budget and respect the work of those who produce our food. All it takes is looking twice at what would normally go in the bin.

Fruit peels

Citrus peels are little aromatic powerhouses. They warm a pot of spices, add depth to desserts, perfume sugar, salt and olive oil, and are even irresistible dipped in chocolate.

Apple peels easily turn into a comforting winter tea. Carrot peels add a sweet, vegetal note to homemade stocks. All of these are small actions that help turn a heavy menu into a lighter week.

Cabbage stalks

The stalks from Christmas cabbages have enough texture to become the base for stir-fries, creamy soups or even more rustic pestos.

The rule is simple: if the food is fresh, local and at its peak, use it whole. In the end, that’s what Christmas is really about — making the most of what exists and giving it new forms. Once you start cooking this way, you realise there are almost no “leftovers”.

Shall we try a few recipes?
For an orange-peel infused sugar (perfect for Christmas), you’ll need:

  • Peel of 1 orange (well washed, without the white pith)

  • 150 g sugar

  • 1 small cinnamon stick (optional)

Spread the peel on a sheet of paper and let it air-dry for a few hours. Then blend the peel with the sugar until you get an aromatic powder. Store in a jar and use in cakes, pancakes, French toast or even in coffee.

For a warm apple-peel and cinnamon tea, you’ll need:

  • Apple peels

  • 1 cinnamon stick

  • 500 ml water

  • Honey to taste

Bring the water to a boil with the peels and cinnamon for 10 minutes. Strain, sweeten and serve warm.
